The 7 day slim down is really super effective, but after doing it the first time, I definitely got tired of baked chicken and roasted veggies. This time I got a little more creative. This recipe is only good through the first 4 days of the slim down as days 5-7 you can’t use salt or olive oil, but it’s so worth it for a delicious change! And it’s a recipe that you can adjust to fit your taste as well :)
7 Day Slim Down Stuffed Peppers
Ingredients
- 2 bell peppers (+ extra if you want to add it to the “stuffing”)
- EVOO
- 1-1.5 lb lean ground turkey
- 10 baby bella mushrooms
- 1/2 sweet onion
- salt
- pepper
- curry powder
- chili powder
- ginger
- garlic powder
- balsamic vinegar
Directions
Preheat oven to 375 F. Cut your bell peppers down the middle and get rid of all of the seeds and ribs. Coat in a little EVOO, salt, pepper and garlic powder. Roast in the oven for about 20 minutes, just until a little softer.
While the peppers are in the oven, dice up your veggies (onion, mushrooms, peppers) and throw them into a large pot or skillet (big enough for the veggies and turkey) with a small drizzle of EVOO. Sautee a few minutes, until onions are translucent. Throw the ground turkey into the pot and season with the seasonings above to taste, or use your own. Those are really just there as a suggestion!
By the time your peppers are done in the oven, your turkey and veggie “stuffing” should also be ready. Take the peppers out of the oven and spoon in your stuffing. Throw them back in the oven for about 10-15 minutes; just enough time to get the tops a little crispy.
When they come out, drizzle with some balsamic vinegar and enjoy!
