@Toneitup who doesnt love some healthy desserts! I am such a sweet tooth kid and when I saw this recipe in @cookinglight I knew I can try to make it healthier. Here is what I did!
Warm Coconut Brown Rice Pudding
You will need the following…
1 1/2 cups Almond milk unsweet vanilla
1 cup Brown Rice
Cinnamon
1 cup Raisins
1 cup Light coconut milk
1/4 almonds
2 egg whites
1 teaspoon of vanilla extract
1/2 cup of Truvia
Directions:
1. Bring water to boil in a saucepan. Stir in rice, cover, and reduce heat to med-low. Simmer 5 mins.
2. Combine Truvia, 1/4 almond milk, and egg whites stirring w/ a whisk in a bowl.
3. Bring remaining 1 1.4 cups of almond milk and coconut milk to a boil in a small saucepan. Gradually add hot milk mixture to egg mixture, stirring with whisk.
4. Return milk mixture to pan stirring constantly. Remove from heat; stir in cooked rice, coconut, raisins, almonds, and cinnamon.
Other try-add vanilla protein for a morning meal!
